You can set the system to prompt for a deposit at a chosen percentage in Maintenance, Branch & System, System Parameters.

Under Orders/Dispense, tick the 'Prompt for Deposit Amounts' checkbox. Then type the percentage amount you would like to be paid in the 'Default Deposit Percentage' box.
